Poriyal is a vegetable side dish, often made by combining a dal and a vegetable, usually wax gourd, which is commonly known as winter melon or pethakaddu. Using of canola oil for this dish helps the ginger-garlic paste come together. It’s also the perfect oil for sautéing aromatics, thanks to its own mild flavour.

Ingredients
- 10 gm ginger
- 5 cloves garlic
- 2 tbsp plus 4-5 drops of canola oil
- 1/2 cup split pigeon pea (tur dal)
- 1 red chilly (dried)
- 1 tbsp split black gram (urad dal)
- 1 tbsp black mustard seeds
- 1 sprig curry leaves (kari patta)
- 2-3 green chillies
- 1 small onion, finely sliced
- 1 medium tomato, chopped
- 1/2 tbsp turmeric powder
- 350 gm wax gourd (winter melon), deseeded and cut lengthwise into 5-6 pieces
- Pinch of salt
