Manju Dewan
Semolina is a very versatile ingredient on the kitchen shelf. It can be used in myriad ways—be it in an idli or dhokla or any sweet for that matter. Here we have used it to make a salty snack. It can be made and kept and fried deep or shallow as and when required.
Semolina bites
Ingredients
- ½ cup semolina
- 1 ½ cup water
- 1 potato (boiled and grated)
- 1 green chilli (finely chopped)
- 1 tsp roasted cumin (powdered)
- 1 tsp chaat masala
- 1 tsp chilli flakes
- ½ tsp turmeric powder
- 1 tsp ginger garlic paste
- 2 tsp fresh coriander (chopped)
- 2 tsp cornflour
- Salt, to taste
- 1 tbsp oil
- Oil to fry
Method
- Sauté semolina on low heat for about 10-15 minutes or until light brown.
- Add 1 tbsp oil and water and mix well until it thickens.
- Now, add grated potatoes and mix well.
- Add the remaining ingredients and mix well to form a dough. Spread it evenly on a greased tray and keep it in fridge for 2-3 hours.
- Now, cut them into desired shapes.
- Heat oil in a wok and deep fry them until golden brown. You can also shallow fry them as per your liking.
- Serve hot with mint chutney and tomato ketchup.
