Famous for its minarets and pearls, Hyderabad is also identified as a heritage food destination. Be it the streets or fine dine havens, the city is full of flavour from the world famous Nizam’s Kitchen and royal recipes. Bringing the taste of that very royally rich food, Taj Swarna’s Hyderabadi Food festival puts a table full of traditional heritage cuisine for 10 days.
Curated by chef Jahangir Khan from Hyderabad, along with chef Aspan, executive chef, Taj Swarna, the festival offers popular recipes from Nizam’s Kitchen including haleem, kacche gosht ki biryani, chicken kebab-e-firdausi, bagarra baigan and khumani ka meetha.
“These recipes are authentic, heritage recipes from Nizam’s Kitchen and carry rich flavours, elaborate cooking techniques and stand out for being representing Hyderabad’s socio-cultural landscape,” says chef Jahangir, with 22 years of culinary experience. “The haleem is a popular recipe of mutton, slow cooked overnight with spices to get the exact flavour. The Hyderabadi cuisine has a variety of food items, he adds. — TNS
