Celebrating the savour and royalty of the Rajasthani cuisine, Fairfield by Marriot has put a spicy and flavourful feast with its Rajasthani food festival. The nine-day fest begins from March 23. It has been curated by Chef Laxmi, who has come all the way from Pushkar to make Amritsar familiar with the cuisine of the royals. “Rajasthan’s cuisine is considered spicy, thanks to a special variety of chilli called the Mathania chilli. Since, we don’t have fertile land, a limited variety of vegetables or dry ingredients, like Ker and Sangri, that are basically plants that grow in desert, were developed into recipes that today are recognised worldwide,” said Laxmi. With an experience of 15 years behind him, Laxmi began working as a chef in local dhabas before making it to the five-star kitchen.
Anukam Tiwari, general manager, Fairfield by Marriott, said, “Rajasthan has something more to the culinary apart from the spices and the flavors. It is its rich culture and heritage that reflects in the food.” — TNS
