There are few words in the North Indian culinary lexicon that are more confusing than ‘launji’. For years, we confused it with ‘kalaunji’, often a star in many dishes. There is the tangy ‘Baingan ki kalaunji’ that is packed with pickling spices and then there is ‘Kalaunji ke aloo’, where the spice is used in tempering.
