The Controller of Patents, Government of India, awarded a patent for crab apple-based jelly sheets developed by the faculty members and researchers of the Central University of Haryana (CUH) here.

Vice-Chancellor Tankeshwar Kumar said faculty members- Dr Anita Kumari, Harish Kumar, Dr Ashwani Kumar, Deepika, Adarsh Shukla — and the entire team had put great efforts to develop a healthy and nutritious food product.

“Our team has made jelly sheets using crab apples. The developed product has more nutritional value compared to commercially available jelly sheets. The product has no preservatives, added colours or flavours. Crab apple is a neglected and underutilised crop that is a potential source of vitamins, minerals, and bioactive compound(s) — especially pectin that has a cholesterol lowering property,” Dr Kumari said.

She said attempts were made to utilise the fruit in a more functional and convenient manner in the form of jelly sheets. The jelly sheets can improve the nutrition and livelihood security of the vulnerable section of the society worldwide, she added.
