Going back to food basics with Fab Café

To promote healthy meals, Fab Café opened its first branch in Punjab after making its presence felt in major metropolitan cities. With a simple menu that brings forth the Indian traditional comfort food, the café offers healthy food that offers an experience.
“Our focus is on using organic, local ingredients to create Indian comfort food that people are familiar with but have forgotten about,” said Rebekah Blank, brand head, Fab Café by Fab India. “We use grains, like millets, ragi, bajra, ghee in our recipes, work with jaggery, honey in desserts. A lot of our preparations are quite similar to what our grandmothers used to cook and eat. Also, our emphasis is on breaking misconceptions around healthy food as most people consider it non-tasty,” she says. A brainchild of chef Sunil Chauhan and Blank, Fab Cafe is two years old now and Rebekah says that their food is all about going natural on our plate.
“Punjab is a food destination and Punjabis love their food. But off late, the use of chemical pesticides and concerns regarding adulterated food has put the focus on healthy foods. We want to bring an awareness of sorts with our food, as we use local, simple ingredients.”
The menu has been designed in a way to offer wholesome experience. So you have Polenta Upma, Desi Egg Akuri (Soft eggs scrambled with onion, tomatoes and coriander, served with a singhara flour paratha) Buttermilk pancakes, Quinoa Salad, Water Chestnut momoz and famous Chicken Chettinad. The menu also offers vegan, gluten and Keto options for health foodies. It also offers some interesting options to explore like Tomato Pappu, a south Indian preparation with coconut and lentils, Kathal Quinoa Biryani or Jackfruit biryani and Keto Chiken Biryani and Beetroot Lotus Stem Tikki Chaat (super food tikki made with beets; lotus, topped with dahi, chutney; lotus chip).
