Winter is here and it’s time for the soup bowls to be taken off the shelves. And for the first taste of soup, of the season, there couldn’t be anything better than the Kashmiri Gosht Yakhni Shorba. This traditional Kashmiri style broth or soup, cooked with goat’s meat, saffron and yogurt and mildly spiced with whole spices, is the toast of “Wazwan”, the ceremonial feast of Kashmir, laid out by Hometel Hotel, Chandigarh.
On the plate is Rishta Palak (mincemeat balls and spinach curry), Rogan Josh (an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine), Gustaba (a popular mutton based delicacy prepared with mutton minced with spices shaped into balls and cooked in flavourful and delicious yoghurt gravy), Yakhni Pulao (Mutton and rice spiced with fennel and ginger), Nadur Yakhni (Lotus stems /root with yoghurt), Methi Chaman (A healthy dish this - paneer cooked with fenugreek leaves and spinach), and Kashmiri Naan (stuffed with a sweet paste of cashew, almond and cherry).
The main course is topped with sumptuous Kashmiri desserts of which Kashmiri Shufta (a mixture of various dry fruits and spices coated with sugar syrup) is king. And, the evening is not complete without a hot cup of Kahwa – the famed Kashmiri tea flavoured with saffron and cinnamon.
Celebrity chef from Kashmir, Hira Lal Pandit, who has been specially flown in to design and oversee the preparation of this menu, says, “We have tried to bring ‘jannat’ in its true form to the people of the tri-city and we assure the food connoisseurs of the city a heavenly experience.”.
