Highly nutritious and available throughout the year, Pumpkin can be enjoyed in a number of different ways. Qasr-e-Pukhtan is a delectable Awadhi dish. The Red pumpkin forms the base for this healthy yet rich, spicy and delicious delicacy which is perfect for both your health conscious mind and your foodie heart.

- Red Pumpkin 100 gm
- Cottage Cheese 150 gm
- Garlic 15 gm
- Ginger 15 gm
- Khoya 25 gm
- Chironji Seeds 25 gm
- Almond Paste 25 gm
- Kasoori Methi 5 gm
- Salt To Taste
- Green Cardamom 5 gm
- Tomatoes 100 gm
- Ghee 15 gm
- Red Chilli Powder 10 gm
- Cumin Powder 5 gms

Method
Peel the pumpkin and boil along with tomatoes, chirongi and other whole spices. After boiling, cool the mixture and bring it to room temperature. Grind this mixture till smooth in a grinder. Strain the gravy with the help of a strainer and keep aside.Now take a pan and add ghee to it. Once warmed properly, add ginger paste, garlic paste and sauté for some time. Add the strained gravy and the seasoning to the pan and cook till thick . Finish the gravy with almond paste. Add paneer to this gravy and serve hot.
