OWING to the scarcity and high price of all food material and other articles in India, the adulteration of foodstuffs is noticed on larger scale than ever before. In some parts a few merchants have been prosecuted for selling unwholesome and adulterated ghee, and in others special legislation has been suggested. Even the Government departments purchasing ghee from contractors have not been able to obtain pure stuff and the following remarks appear in the report of the Police Supply and Clothing department, Burms, for 1917-18:-“The adulteration of ghee has lately been exciting considerable attention in India, which is practically our sole source of supply as the local manufacture is insignificant. Pollution at the source defiles the whole stream and importers consequently cannot be entirely blamed for fluctuations in quality, but at the same time every precaution has been taken by this department by means of analytical tests to protect our men.”
