Ingredients

Rice (picked, washed and drained) 1 cup

Tuvar/Arhar dal (picked, washed and drained) 1/2 cup or little more

Mustard seeds 1/4 tsp

Fenugreek seeds 1/4 tsp

Tamarind pulp 1 tsp

Turmeric 1/2 tsp

Red chilli powder 1/2 tsp

Coriander powder 1 tsp

Cumin powder 1/2 tsp

Tomatoes (medium-sized, quartered) two

Onion (optional) (medium-sized, sliced thickly) one

Drum sticks (scraped and cut in 2 inch pieces) 1 small

Capsicum (cored and quartered) 1 small

Beans (strung and cut) 4-5

Carrot (scraped and cut in discs) one

Jaggery (crumbled) 1tbsp

Oil or ghee 1/4 cup

Salt to taste

A pinch of asafoetida

Method

Heat oil in a pot and add asafoetida.As soon as it dissolves, add mustard and methi seeds. As these crackle, add powdered spices. Stir well and add the vegetables. Stir fry for two minutes. Add tamarind pulp and jaggery then add the rice and daal. Pour 3 cups of water. Bring to boil, reduce heat and cook covered til done to preferred consistency. You may use any vegetables at hand and even a pinch of samara masala, if you like. Mix well before serving!
