Kaushik Roy, founder of ‘Biryani By Kilo’, said: “We use high-quality rice which is raw basmati rice, aged for two years which is delicate to handle. Everyone else uses six-month-old, artificially aged rice. The ingredients are hand-picked like our masalas come from Kerala and we do in-house butchery. We have standardised the ingredients to make sure the taste is consistent through all our outlets.” “The state is an important market for us and we are confident that the patrons will relish our dishes at our new dine-in at the city outlet. With biryani finding its due importance in the Indian QSR domain, we aim to expand our footprint in the domestic market by opening more than 100 outlets,” he added.
