Jordanian chef Omar Sartawi transforms eggplant skins by salting, dehydrating and cooking underwater to create a leather-like sustainable material.

Sartawi works with Jordanian designers to turn his material into fashion. The masks are sewn by Salam Dajani, while Nejla Asem adds jewelry.
